Cherubini's Metodo Classico Sparkling wine 'Subsidium' is distinguished by its depth of aromas, in which oxidative notes stand out, and by its rich and structured palate, accompanied by a lingering minerality. The Chardonnay and Pinot Noir grapes are vinified separately in cement vats, where they ferment using indigenous yeasts. This is followed by blending and maturation for 60 months, ending with disgorgement and topping up with the same wine.
