The Sparkling Rosé Brut Classic Method "Calce" from San Marzano is a purely Apulian experiment, produced with Chardonnay grapes to which indigenous red grapes are added, giving a typical Apulian imprint to this wine. The San Marzano winery is a historic reality of Salento, always at the forefront in exploring new enological frontiers, from which this wine was born. On the nose, there are hints of red fruits, orange, and typical notes of pastry and yeast. On the palate, it is dynamic, lively, medium-bodied but with a firm tannic structure and a soft sip.

The Spumante Rosé Brut Metodo Classico “Calce” by San Marzano is born in San Marzano di San Giuseppe in the province of Taranto, in the flourishing countryside of the Apulian land. In 1962, 19 local winemakers decided to join forces, giving rise to a reality of synergistic work sharing to enhance the potential of Primitivo di Manduria. Over time, this reality grew, and in 1982, then-President Francesco Cavallo consolidated the winery's activity, projecting it towards a prosperous future: the first bottles began to hit the market, reaching international markets as well, creating an authentic image with a distinctive personality. The 2000s mark sixty years of activity, which boasts the merit of having exported the beauties of the Apulian land to the world.

The Chardonnay and Negroamaro grapes of the Spumante Rosé Brut Metodo Classico “Calce” by San Marzano are cultivated using the trellis method on soils mainly of medium texture with clay, limestone, and gravel; the the production area is hilly with a south/southeast exposure, ideal for ensuring that the rows are consistently hit by sunlight. The summers are predominantly warm, sunny, and characterized by breezes from the two seas that surround the region; winters are mild, often affected by rain. The harvest takes place between the first week of August and the second week of September manually; in the winery, the grapes are softly pressed, and only the first fraction of flower must is used, which is then fermented. It undergoes a second fermentation in the bottle according to the principles of the Metodo Classico and ages on the lees for 36 months.

To the eye, the Spumante Rosé Brut Metodo Classico “Calce” by San Marzano appears a soft pink with delicate and bright reflections. The bouquet of aromas recalls citrus fruits, notes of summer white flowers, and red fruits such as raspberries, currants, and blueberries, along with the characteristic scent of freshly baked bread crust; on the palate, it is dynamic, lively and elegant with good persistence that offers a pleasant sip. It is recommended to pair withdishes based on shellfish and mollusks, stewed fish, and soups; also interesting with seasonal vegetable dishes and fresh cow's milk cheeses.
