The Spumante Metodo Classico Rosé Dosaggio Zero “KK” by Kante is the result of a complex and mysterious interaction, which takes place between a soil defined as ‘without soil’ and the hands of the ‘alchemist’ winemaker. Edi Kante, owner of the winery of the same name, is the one who plays this precious and very important role. He likes to call himself a craftsman, but also an inventor; capable of loving and taming this territory, Edi has learned to relate to the land and nature, becoming able to enhance them at their best and express them in all their power. The winery is nestled among the karst rocks, or rather, it is literally carved into them. The Trieste Karst is characterized precisely by the abundance of stone, which forces the plants into a struggle for their survival and pushes them to give only the best. In this mineral context, wines with extraordinary qualities of finesse and elegance are born.
“KK” by Kante is a Metodo Classico Dosaggio Zero Rosé obtained from 100% Pinot Nero variety grapes. The grapes come from vineyards located at an altitude of 250 meters above sea level on the characteristic karst soil, defined by red earth and limestone rocks. The vines that populate these vineyards have an average age of 10 years and are harvested during the second half of August. The base wine ages for a year in already used barriques and is then stabilized in steel, before undergoing refermentation in the bottle. At the end of the sparkling process, “KK” Rosé ages on its own yeasts for at least a year.
