The Sylvaner "Aristos" from Cantina Valle Isarco is a semi-aromatic white produced in South Tyrol with fermentation of part of the grapes in large acacia barrels. The organoleptic profile is intense and captivating, woven with fruity, spicy, and herbal elements, with fern, yellow peach, and magnesite, which open the doors to a round, agile, dynamic tasting in perfect acid-salty balance

The Sylvaner "Aristos" from Cantina Valle Isarco is a semi-aromatic wine with a distinctly fruity profile. It impresses with its expressiveness, and the more attentive palate will identify a peculiarity that lies in the choice made by the winery during vinification, where half of the wine mass ferments in wood to enhance its personality. A label that already evokes emotions, but that in 2-3 years will amaze even more for its complexity and depth.

The Aristos Sylvaner Cantina Valle Isarco comes from vineyards located about 550-650 meters above sea level. We are in parcels that surround the monastery of Sibiona, the "Acropolis of Tyrol," characterized by a shallow alluvial gravelly soil, which contains diorite and skeleton. After destemming the bunches, the best grapes are sent to the pressing phase, and the must obtained from this gentle crushing ferments at controlled temperature both in steel containers and in large acacia barrels. The final aging phase takes place in steel tanks, where the wine remains to age for 7 months staying in contact with its noble lees.

The Sylvaner "Aristos" from Cantina Valle Isarco has a straw color, characterized by a vivid and shiny hue, very bright. Fruit is the main protagonist on the nose, where more vegetal and floral notes also emerge. On the palate, it is harmonious, medium-bodied, with a full sip that plays on freshness and sapidity, well-balanced components that make the drinking experience always satisfying. A bottle whose character arises from the winery's choice to vinify it partly in wood, a decision that rewards the palate of those who have the opportunity to taste it. To be tried with classic fish pairings, precisely because of its structure it is also to be tasted with dishes based on white meat.
