The Timorasso Boveri “Derthona” is a white wine that originates from the hills of Tortona in Piemonte. We are in an area that, thanks to the rediscovery of this varietal, Timorasso, in recent years has come back to the forefront. Visionary entrepreneurs like Luigi Boveri have bet on it with the right dose of will and recklessness, which today fully rewards their efforts and gamble. We are indeed faced with a identity bottle, in which the aromas and flavors manage to thoroughly narrate the peculiarities of the varietal used. It stands out for its versatility at the table, making it a great choice to offer to passionate friends who are not yet familiar with it.
This “Derthona” Boveri is a pure Timorasso, an indigenous grape from the Tortona area that has seen a remarkable revival in Piemonte viticulture over the last 10 years. The winery cultivates this varietal using the guyot system, in plots located about 250 meters above sea level. We find ourselves in an area whose subsoil is mainly composed of marls and limestone. The grapes obtained from the destemming of the bunches are gently pressed, and then a static decantation of the must obtained precedes fermentation; the latter then takes place in steel tanks at a controlled temperature between 18 and 20 degrees. The wine then rests for 12 months on the fine lees in steel
The Timorasso “Derthona” Boveri flows in the glass with a typically straw-yellow color, possessing a pleasant light, brilliant to the eye. The olfactory spectrum highlights an entry of notes consisting of references to white-fleshed fruit, from which a delicate hint of more mineral aromas emerges. On the palate, it is medium-bodied, with a sip that has a nice breadth, characterized by a fresh and savory taste. It is recommended to pair it with savory pies, cheese risottos, and second courses based on fish accompanied by tasty sauces!
