The Trento Spumante Brut Classico by Cesarini Sforza is a simple, fruity, and fragrant Metodo Classico, ideal to enjoy as an aperitif or to accompany seafood or delicate vegetable appetizers. It is made only with Chardonnay grapes, sourced from a selection of various vineyards on the estate, all located in the hilly area surrounding the city of Trento. The label is the typical expression of a classic mountain sparkling wine, characterized by great freshness and a clear smoothness on the palate. The exclusive vinification in steel allows for the preservation of the varietal character of the grapes, enriched by evolving notes due to aging sur lattes.
The Trento Brut Classico is born in one of the most important realities of Trentino. The Cesarini Sforza winery was established in 1974 with the desire to produce a quality Metodo Classico using grapes from Trentino vineyards, where Chardonnay and Pinot Nero have adapted very well. For the Brut Classico cuvée, the vines located in the area of the Hills and the Cembra Valley, cultivated at an altitude ranging from 350 to 700 meters above sea level. The composition of the soils is quite heterogeneous and varies depending on the vineyards: from limestone to flakes to dolomite to porphyry soils. The harvest takes place in September, and after the end of the soft pressing, the must is fermented in stainless steel tanks at controlled temperature. After a few months, the second fermentation in the bottle takes place according to the Metodo Classico with a 24-month aging on the lees.
The Trento Brut Classico is the entry cuvée into the world of Cesarini Sforza sparkling wines. A bottle with a convivial character, to be enjoyed informally among friends. In the glass, it presents a bright light straw yellow color with luminous greenish reflections. The perlage is fine and of good persistence.
