The Trento Spumante Riserva “Piancastello” is a fresh and elegant Metodo Classico, made with Chardonnay and Pinot Nero grapes. The aging on the lees for at least 3 years gives the bouquet, in addition to the typical mineral freshness of the terroir, also a good personality and expressive complexity. The floral and fruity aromas are enriched by hints of toasted bread crust, dried fruit, and spices. The sip is dynamic, smooth, with lively freshness and aromatic persistence.
The Riserva “Piancastello” is a Brut Sparkling Wine produced in a true cru at the Endrizzi estate. The Pian Castello vineyard is located on a terraced plateau halfway up the slope, well exposed and completely surrounded by woods. Here, Chardonnay and Pinot Nero have been cultivated for over thirty years with clones from Champagne, producing low yields of 50 quintals per hectare. After manual harvesting, the grapes are pressed very gently as whole clusters and the free-run must is sent for fermentation, part in stainless steel and part in barrique. After a few months of aging, the base wines are blended to create the cuvée. The subsequent aging period in bottle on the lees lasts 36 months before proceeding to disgorgement.
The Metodo Classico Trento Brut Riserva Piancastello is a refined sparkling wine, which well represents the noble Trentino tradition in creating labels characterized by mineral freshness and aromatic richness. Low yields, perfect ripening of the grapes, significant temperature variations, and a long aging period are the ingredients for the success of this Metodo Classico. In the glass, it presents a straw yellow color, with fine and persistent bubbles. The bouquet is fine and elegant with floral aromas, fruity notes, hints of pain grillé, vanilla, and honey. The sip is fresh and lively, with a harmonious mid-palate and a savory and mineral finish.
