The Valpolicella Ripasso Superiore from the Pruviniano Collection is a full-bodied and warm red wine, born from a ripasso on the Amarone pomace. Aged in wood, steel, and bottle for over a year, it reveals good structure and intensity, with pleasant tannins and good softness, enveloped by aromas of cherry, red fruit jam, dried fruit, vanilla, and toasted and spiced hints.

The Valpolicella Classico Superiore Ripasso “Pruviniano” by Domini Veneti is a beautiful version of this rich and intense red from the region. It is a wine born in the mid-1960s, thanks to the idea of using the pomace from Amarone to enrich the aromatic profile and structure of the Valpolicella red. Thus, a new wine with a typically territorial face was born, combining the varietal characteristics of the indigenous grapes of the area, Corvina, Corvinone, and Rondinella, with the technique of refermentation on the pomace. In just a few decades, it has secured a prominent place in the landscape of Venetian reds and today represents one of the most loved wines of Valpolicella.

The “Pruviniano” is a Valpolicella Classico Superiore Ripasso by Domini Veneti produced with grapes from a magnificent vineyard cultivated on terraces with dry stone walls, located in the Prognol area, in the heart of the Valpolicella Classica region. The vineyard is about 15 years old and enjoys a wonderful southeast and southwest exposure. The vines roots in precious soils composed of silt, clay, and limestone. The harvest is carried out manually towards the beginning of October. The grapes are first destemmed and then sent for fermentation at a controlled temperature, with a maceration on the skins of about ten days. After a brief stop in steel tanks, the wine is refermented on the Amarone pomace with a contact of about fifteen days, in order to extract all the fragrances and aromas. The Ripasso matures in wooden barrels and in steel for about 9 months and completes the long aging process with 6 months in the bottle before being put on sale.

The Valpolicella Classico Superiore Ripasso “Pruviniano” by Domini Veneti is an excellent wine, allowing one to appreciate the fruity pleasantness of the grape, accompanied by a richness and aromatic depth given by the Amarone pomace. In the glass, it presents a beautiful intense ruby color with slight garnet reflections. The olfactory profile seduces with rich aromas of cherry, blackberry, black currant, small dark berry fruits, dark, red plum, soft sensations of oriental spices, dried fruit, toasted hints, and woody memories. The sip is broad and harmonious, with a velvety tannic texture and dense aromas. The finish is very balanced and persistent, with a delicate closure on spicy notes. It is a perfect red to enjoy with grilled red meats and roasted red meats.
