The Valpolicella Ripasso by Santa Sofia is a red wine from Veneto that "passes over" the skins of Amarone and Recioto for about 3 days. On the nose, notes of spirit-soaked black cherry, dehydrated plums, dried flowers, sweet spices, and licorice emerge. With good concentration and enveloping character, it displays structure, warmth, and personality, wrapped in sustained freshness and a sculpted tannin.
The Valpolicella Ripasso Superiore from the Santa Sofia winery is a soft, versatile, and incredibly pleasant red wine produced in Marano di Valpolicella, Fumane, and San Pietro in Cariano, in the province of Verona, in Veneto. This label is made from a blend of Corvina, Corvinone, predominantly, and Rondinella grapes, sourced from vineyards trained using the traditional guyot method on gentle hills, facing southeast, at an altitude between 150 and 260 meters. The soils, which benefit from excellent ventilation and drainage, are characterized by medium-textured limestone soils. The winery, surrounded by a stunning Palladian villa, is owned by the Begnoni family, who purchased it in the sixties and today promotes various initiatives as the privileged custodian of this wonderful place.
The Valpolicella Ripasso Superiore is produced with carefully selected grapes harvested between the first and third decade of September. The bunches, brought to the winery, undergo soft destemming and crushing before undergoing alcoholic fermentation in stainless steel containers, at a controlled temperature of 26-28
