The Valpolicella Ripasso by Viviani is a soft, intense, and well-balanced wine, obtained from a refermentation on the Amarone pomace, with subsequent aging in wood for 12 months. It has aromas of berries, spirit-soaked cherries, sweet spices, and damp earth, and offers a soft, pleasant, warm, elegant, and enveloping sip

The Valpolicella Ripasso Superiore by Viviani is a red wine from Veneto that comes from virtuous choices, both in the vineyard and in the winery. In fact, no synthetic chemicals are used between the rows, while during vinification, the aim is to combine the value of tradition with technological innovations that allow for constant monitoring of each step. A “round” bottle, where one appreciates a warm sip, with good intensity even in the long final aftertaste. A label that, for body and structure, we can consider as a young Amarone, absolutely to be tried.

The Valpolicella Superiore Ripasso signed by Viviani originates from a blend of three classic red grape varieties of the Veneto terroir, namely Corvina, Molinara, and Rondinella. We find ourselves in a predominantly calcareous terroir, stony in the first layer of soil, a quality that facilitates the optimal distribution of water. The grapes, after manual harvesting, are destemmed, and the berries are gently pressed. The must thus obtained ferments in vitrified cement tanks remaining to macerate for a total of 10-12 days. The second fermentation is then carried out on the pomace of the Amarone, thus allowing the final product to enhance its personality. Finally, it concludes with the aging phase, in which the wine rests for 12 months in large oak barrels.

The Valpolicella Ripasso by Viviani presents itself to the eye with an intense and not very penetrable color, reminiscent of the hue of ruby. The nose is concentrated, where the fruit, also in jam and under spirit, alternates with sensations of humus and spicier hints, deriving from the wine's resting period in wood. On the palate, it is medium-bodied, broad and soft, with a warm sip, endowed with excellent palate persistence. A bottle that recalls the greatness of Amarone in a more “light” version, ideal to taste with meat dishes or with recipes where game is the protagonist.
