Federico Mencaroni's Verdicchio dei Castelli di Jesi Metodo Classico Brut is a bubbly made only from grapes indigenous to the Marche region. After long ageing, this bubble from the Adriatic develops great finesse. The nose releases notes of white fruit, wild flowers and a touch of bread crust. The palate is fresh and mineral, with a persistent Mediterranean profile. An elegant interpretation of Verdicchio in bubbly, to be tried with Mediterranean fish sashimi
