Unusual grapesThe Vitovska by Vodopivec is a complex and dynamic white wine, left to ferment and macerate on the skins for 6 months in terracotta amphorae. On the nose, it is delicately oxidized, with mineral notes and ripe white fruit, and a briny and spicy background of cloves and licorice in the finish. On the palate, it is soft, accompanied by medium acidity and fine tannic structure. In the finish, fruity returns are linked to iodized notes of great freshness.
If there is a grape variety representative of the harsh and proud area of Carso, where the Bora wind fiercely lashes the ancient vines that have become one with the mother rock, that grape variety is indeed the Vitovska: shy and slow to express itself during the first years of life, very demanding from a production standpoint, it is capable of giving unique sensations if vinified like a red, providing astonishing proof of longevity, evidenced by an aromatic complexity that is genuinely out of the ordinary and difficult to find in other whites.
Adding luster to this grape variety with deep peculiarities are the Vodopivec brothers, who have been engaged for years in a production that resembles more of a lifestyle choice: in the Vodopivec vineyards, straddling Italy and Slovenia, only Vitovska plants grow. No fertilizers, herbicides, or fungicides are used in the fields, and the harvest actually takes place only in the best years. For a small percentage of Vitovska, the Vodopivec reserve a winemaking technique that recalls the ancient use of buried terracotta amphorae, as was done at the dawn of wine's birth in the Caucasus region.

With this principle, the Vitovska Anfora by Vodopivec rests in amphorae in contact with the skins for 6 months, taking on unparalleled aromatic connotations, and then matures for 2 years in large Slavonian oak barrels. Only in this way can the Vitovska show its best sides, offering the possibility to taste a wine just as it would have been done almost 2000 years ago.
