The Bibi Graetz winery is a rising star in the wonderful world of Tuscan wines. It is located in the rolling hills of Fiesole that surround the beautiful city of Florence. The estate is built around the Castello di Vincigliata, an ancient medieval building dating back to 1031, renovated in 1851 and purchased by the Graetz family in the early 1960s. Bibi Graetz, an artist with a diploma from the Academy of Fine Arts, fell in love with this natural paradise and in 2000 decided to abandon his profession to dedicate himself completely to country life. He inherited the vineyards and began to cultivate grapes, contributing not only his passion but also his artistic talent. Testamatta is the first vineyard under the castle to be cultivated by Bibi. It has a fantastic south-westerly exposure from which you can see a beautiful sunset and houses over 80-year-old vines of Sangiovese, Canaiolo and Colorino.

Bibi Graetz's winery has its own way of seeing and living viticulture, preferring native grape varieties and old vines that offer more concentrated and refined grapes. Thus, as a true artistic researcher, he identified other plots with ancient vines around Tuscany. He has acquired stretches of countryside in Rufina, Greve, Panzano and Isola del Giglio, reaching a total of 50 hectares under vine. The winery therefore breeds different varieties of the ancient Tuscan tradition using organic methods, primarily Sangiovese, but also Ansonica on the Island of Giglio on terraces that fall steeply to the sea. Near Fiesole, the ancient vines rest on marl and clay soils, full of tall grass to combat the onset of powdery mildew, while the Ansonica varieties of Giglio sink their roots into a sandy and poor soil. In the cellar, fermentation takes place in steel and is catalysed by indigenous yeasts, naturally present on the skins. Refinement takes place in the same steel tanks or in barriques.

Genuine expressions that, as well as having labels of great appeal, are able to astonish, capture, amaze and at times even shock for their depth and richness.
