Castello della Sala is one of the properties of the Antinori family, one of the dynasties that has made Italian wine history since the 14th century. Today, Antinori manages an estate composed of estates located in some of the most famous wine territories of our peninsula: the Antinori Chianti Classico Estate, the Tignanello Estate, Villa Antinori, Badia Passignano, Pèppoli, Pian delle Vigne in Montalcino, Guado al Tasso in Bolgheri, Fattoria Aldobrandesca, Le Mortelle, La Braccesca, Tenuta Monteloro, Tomaresca, and Prunotto in the Langhe and Tenuta Montenisa in Franciacorta. The Castello della Sala property is located in Umbria, not far from Orvieto and the Tuscan border, in an area that has been devoted to the production of great wines for centuries.

The Castello della Sala estate covers a total area of 500 hectares, 200 of which are dedicated to vines, cultivated mainly with Chardonnay, Grechetto, Sauvignon Blanc, Sémillon, Procanico, Pinot Blanc, Viognier, Gewurztraminer and Pinot Noir. The cool climate, characterized by significant temperature swings between daytime and nighttime temperatures, and wonderful sunny exposures (220-470 meters above sea level), create a perfect habitat for white grapes and for a varietal such as Pinot Noir, which prefers a continental climate. The soils are particularly suitable for viticulture and are mainly composed of clays and limestones rich in marine fossils.

The vines are cultivated with the utmost respect for nature, in harmony with an unspoiled environmental context. Healthy grapes of the highest quality form the basis of a range of wines with a strong and recognizable personality. Castello della Sala labels are made in a style that, starting from the most ancient traditions of the Orvieto area, turns its gaze toward famous international models. Cervaro della Sala, made with Chardonnay and a small percentage of Grechetto, is reminiscent of the great whites of Burgundy vinified and aged in barriques, just as Conte della Vipera, a blend of Sauvignon Blanc and Sémillon, is inspired by the whites of Bordeaux. Prominent among the labels is Muffato della Sala, one of the very few dessert wines made in Italy from grapes attacked by Botyitis Cinerea.
