Domaine Chevrot
The Domaine Chevrot is located in the heart of Côte de Beaune, in the southernmost part of Burgundy, precisely in Cheilly-les-Maranges, a small municipality that embodies the authenticity of the regional winemaking tradition. The history of the winery dates back to 1830, when the Chevrot family began producing wine on an agricultural estate dating back to 1798. Today, the Domaine is run by brothers Pablo and Vincent Chevrot, both graduates of the renowned Enological School of Beaune, who continue the family tradition with commitment and passion. The winery is a benchmark for the production of organic wines, with a certification obtained in 2008, and follows strict principles of environmental sustainability. Thanks to the privileged location of the estate, Domaine Chevrot is able to produce wines that fully express the character of the terroir of Maranges and Santenay, areas with a long winemaking history that have fascinated enthusiasts from all over the world.
The vineyard extends over 18 hectares of clay-limestone soils, which emerge from geological outcrops dating back to the Upper Triassic and the Jurassic.lower, lands that give the wines a unique minerality. The vines have an average age of about 30 years, with some plants dating back as far as 75 years, planted by the grandfather. Vineyard management is careful and respectful of the terroir, with particular attention to soil maintenance and integrated vineyard protection. The Chevrot brothers follow a viticultural approach that combines tradition and innovation, aiming for low yields and a quality that reflects the character of the land. Among the cultivated varieties are Pinot Noir, Chardonnay, and Aligoté, which give rise to complex and harmonious cuvées, with particular attention to the quality of the grapes and their ripening.
