Domaine de la Grosse Pierre
Within the municipality of Chiroubles, in the namesake cru of Beaujolais, operates Domaine de la Grosse Pierre, a prime example of genuine sustainability in one of the most dynamic wine regions in recent times. The Domaine was founded in the 1960s by Georges Passot, who was succeeded in 1979 by Alain and Veronique, who in turn passed the baton to their daughter Pauline in 2018, returning from a series of experiences as a sommelier in France and abroad. A cornerstone of Pauline's production philosophy is to express the most intimate and pure essence of the terroir through a passionate and genuine approach.
Domaine de la Grosse Pierre includes 9 hectares of vineyards mainly located in the cru of Chiroubles, with a small area that also falls within the crus of Fleurie and Morgon. Here, the traditional Gamay grape reigns supreme, cultivated by the estate according to the principles of organic farming. The vines, consisting of old stocks that are up to 80 years old, are planted in soils made up of granite.pink, located at an altitude ranging from 300 to 540 meters above sea level with exposure from southwest to east. In the cellar, the hand-harvested grapes are vinified whole cluster with alcoholic fermentation occurring spontaneously thanks to the intervention of only indigenous yeasts at controlled temperatures, never exceeding 25 °C. The fermentation process is accompanied by 8-14 days of semi-carbonic maceration, during which delicate pump-overs are performed. During vinification, no additives or enological auxiliaries are used, including sulfur, and alcoholic fermentation is always followed by malolactic fermentation, which is also spontaneous. Once the fermentation processes are completed, the mass is aged for about a year in steel tanks, concrete vats, or oak barrels.
The selection of Domaine de la Grosse Pierre includes the important crus of Chiroubles, Fleurie, and Morgon, among the finest expressions of all Beaujolais. If one must be mentioned, the Chiroubles 'Grille-Midi' is to be counted among the most representative labels for the Domaine.
