Domaine Ponsot
Domaine Ponsot is located in Burgundy in Morey-Saint-Denis, right in the heart of the famous Côte de Nuits area, between Gevrey-Chambertin and Chambolle-Musigny. The origins of the estate are very ancient, dating back to 1872, when William Ponsot, originally from Saint Romain, purchased a property in Morey-Saint-Denis with some plots already famous at the time, such as Clos des Monts-Luisants, Clos de la Roche, Gevrey-Chambertin Les Combottes, and Charmes Chambertin. The domaine has traversed the centuries to reach the present day, carefully preserving the ancient heritage of knowledge of the territory and a precious savoir-faire on which the success of this historic winery is based.
The main fortune of the estate lies in a terroir with extraordinary qualities, particularly suited for viticulture. The vineyards of the Côte d'Or rest on Jurassic limestone marls, resulting from slow sedimentation in an environment of warm, shallow seas. In particular, the vines of the domaine, located in the areas of Gevrey Chambertin, Morey Saint Denis, and Chambolle Musigny, are characterized by soils predominantly of limestone matrix, which have proven to be very suitable for the cultivation of Pinot Noir and Chardonnay for centuries. The vines are managed with respect for the environment, inspired by ancient farming practices of the past, before the rise of industrialization and chemistry. An approach that translates into the protection of the ecosystem as a whole, considering viticulture as part of a natural context to be preserved in its entirety.
The philosophy of the domaine is linked to the production of traditional wines, far from the influence of trends. Always faithful to the peculiar characteristics of each individual plot, the focus of the work in the vineyard and winery is on the enhancement of the unique personality of the terroir. All harvests take place at full phenolic maturity, to ensure rich and intense aromas. The harvest is done manually, with a selection in the vineyard of the healthiest and ripest bunches, which are then checked on the sorting table before being sent for fermentation. The vinifications and the aging follow the best traditions of the territory, with patience and with a careful selection of woods.
