Elav

Elav is a craft brewery, but above all ‘independent’ from the province of Bergamo, which has quickly become one of the most valid and vibrant representatives of the Italian brewing revolution. Antonio Terzi and Valentina Ardemagni, the two founding partners, represent respectively the heart and the brain, the passion and the reason of the independent brewery Elav: he is the master brewer, she is responsible for the communication of the elavian world, not so much as a brand, but as a true lifestyle. The histrionic and daring madness that meets clarity and sense.

Working, experimenting, and knowing are the three assumptions on which the Elav brewery was born and is developing: a way of working artisanally, which leaves room for fermentation and the continuous search for new beers and new ways to represent them. Born in 2003 as a beer firm, it began its journey in 2010, the year the current brewery in Comun Novo was founded. Over the years, Elav has grown both qualitatively and quantitatively, enhancing its structural endowments. In 2015 finally comes the big decision to purchase a new 2000-liter plant, prepared by four hands with Errebi Steel, completely manual. Today the Elav brewery has reached brewing about 6000 hectoliters per year, going from the 10 references of the beginning to the current 40, distinguished among musical beers, seasonal, rarities, and some novelties always around the corner. What remains unchanged is the production method: no filtration and no pasteurization, only the fruit of manual and meticulous work. But it doesn't end there: in 2015, the Società Agricola Elav was born with the noble objective of using quality raw materials from the territory for the production of each batch. In Val d’Astino at the foot of Città Alta, the hop field takes shape, extending over 2 hectares and seeing different varieties such as Cascade, Saaz, Chinook coexist, which will allow the birth of some local fresh hops. To all this are added three owned venues in Bergamo and the province and the beautiful Cascina Elav, around which barley and vegetables.
