Fanny Sabre
The Domaine Fanny Sabre was born in the heart of Burgundy, in Pommard, where Fanny took the reins of the family business in 2006, at about 20 years old. Young and determined, she turns her vision of authentic wines into reality and quickly makes the estate stand out among the most interesting names in the Côte de Beaune. Today, the domaine extends over about 5 hectares of vineyards in the prestigious denominations of Pommard, Beaune, Volnay, Meursault, and Savigny-lès-Beaune, in a mosaic of crus and parcels where Pinot Noir and Chardonnay express the richness of the Burgundian terroir with rigor and delicacy.
In the vineyard, Fanny Sabre practices viticulture that follows biodynamic principles, attentive to soil health, biodiversity, and the natural rhythms of the vine. Every intervention is designed to enhance the terroir: soil work is carried out lightly, avoiding compaction and preserving microbial life, while plant management aims to promote ventilation and a balanced exposure of the clusters to the sun. The harvest is strictly manual and allows for the selection of only perfectly ripe grapes, and each parcel is followed individually to respect the specificity of the microclimate and the soil. Every gesture in the vineyard reflects Fanny's belief that an excellent wine is born from a healthy ecosystem, nurtured with patience and respect, where nature and man collaborate in harmony.
In the cellar, fermentations occur with indigenous yeasts and without the use of clarifying agents, respecting the authenticity of the grapes and the terroir. The use of new wood is limited and calibrated to preserve the freshness of the fruit. When necessary, aging in wood mainly takes place in French oak barriques, to harmonize the structure and finesse of the juice without covering the identity of the grape varieties and soils.
