Francois Carillon

The Burgundian Domaine François Carillon stands out for the passion and precision with which it creates each label. We are in the famous Côte de Beaune, precisely within the village of Puligny-Montrachet, well known to any wine enthusiast of the region. Although the official foundation of the winery took place only in 2010, the winemaking roots of the Carillon family date back to the 16th century. After decades of suffering due to the phylloxera crisis and subsequently the World Wars, in the 1960s Louis Carillon breathed new life into the family winemaking business. A few decades later, in 1988, he joined Domaine François, where, together with his brother Jacques, he assisted their father Louis in managing the estate, which was divided between the two brothers in 2010.

The 16 hectares of property are distributed among the AOCs of Puligny-Montrachet, Chassagne-Montrachet, and Saint Aubin, with high planting densities of about 10,000 vines per hectare. The estate cultivates almost exclusively Chardonnay, a noble indigenous white grape variety that reaches its highest qualitative expression in this area. François pursues a sustainable viticultural approach, aware that the first step to creating great wines is to have a healthy vineyard and excellent grapes. In this sense, only natural origin products are used in the field, only when the plants require it. Pruning operations, as well as harvesting, are carried out by hand, aiming to control yields in order to achieve perfect ripeness of the berries. In the winery, after gentle pressing, the must is placed to ferment in oak barrels, 10-15% of which are new, where it undergoes complete malolactic fermentation. Aging takes place in the same barrels on the fine lees for about a year, followed by 6 months in steel tanks before bottling.
