Nyetimber
Nyetimber is an English winery that produces sparkling wines appreciated worldwide. It is a high-end production of Metodo Classico, inspired by the most famous models of Champagne, an essential reference for anyone working in this sector. The great care in all aspects of production and the long aging on the lees are the basis of a range of labels characterized by elegance, intensity, and complexity. The vineyards are cultivated on very suitable soils, similar to those of the Champagne region. The magnificent sunny exposures and the cool climate allow for a harvest time with healthy and ripe grapes of excellent quality.
For production, only grapes from the estate's vineyards are used, allowing for direct control over the quality of the raw material throughout the year. Cherie Spriggs and Brad Greatrix personally oversee all the vineyards, which are managed individually by parcel, to get the best from each plot. The meticulous management then translates into parcel vinifications, which allow for a wide selection of base wines at the time of creating the final blends of the various cuvées. The estate is managed with the utmost attention to the environment, according to the principles of sustainable agriculture and a holistic vision of the vineyard, within an overall ecosystem to be maintained in balance and harmony.
The vineyards are located in the regions of Sussex, Hampshire, and Kent and are surrounded by woods and pastures, creating a habitat rich in biodiversity. Over 30% of the estate's area is covered by shrubs and hedges, which promote the presence of spontaneous flora and fauna. During the winter months, sheep graze between the rows, naturally and eco-compatibly keeping the grass low and also fertilizing the soils. The use of drones allows for precision agriculture, intervening with treatments only when and where it is strictly necessary. The choice of grape varieties is obviously the classic one of Champagne: Chardonnay, Pinot Noir and Meunier.
