Located in Le Mesnil-sur-Oger, in the heart of the Côte des Blancs, the Stephane Regnault sparkling wine estate produces refined Champagnes that fully express the mineral soul of the terroir. Indeed, the estate's philosophy is to enhance and exalt the characteristics of the terroir, interpreted through Stephane's personal style. In 2007, after working briefly as a sommelier in London and as an aerospace engineer in Paris, Stephane Regnault returned to the Côte des Blancs to take the reins of the family winery.
The plots cultivated by Stephane Regnault extend over about 4 hectares within the Grand Cru villages of Oger and Le Mesnil-sur-Oger, where Chardonnay predominates and the soils are characterised by an abundance of chalk, compact or fractured depending on the sub-zone. The vines, most of which are between 40 and 60 years old, are cultivated under a certified organic system supplemented by biodynamic practices, with the use of various preparations aimed at reducing the quantities of copper and sulphur used in phytosanitary defence, thus favouring the well-being of the soil, the plant and the environment in general. In the cellar, an attempt is made to enhance the quality of the grapes through simple and non-invasive operations, with parcellaric vinification and a rational use of wooden barrels. Fermentation takes place spontaneously and the use of sulphur dioxide is limited to what is strictly necessary to protect the wines from oxidation. The vin de reserve are made according to the Solera method, or perpetual reserve, which consists of creating a blend of several vintages that is stored in wooden barrels and renewed every year.
The names of Stephane Regnault's labels pick up on musical vocabulary, particularly that of modal jazz, another of Stephane's strong passions, with appellations such as 'Lydian', 'Mixiolydian' and 'Dorian'. The Champagnes of this vigneron stand out for their complex harmony, which is as much the basis of the vigneron's genuine style as of the unique character of the Côte des Blancs.
