Tatamà

In the heart of Puglia, in San Vito dei Normanni, Tatamà comes to life, a small but significant agricultural reality founded by Danilo Alfonso Prete in 2014. The company is rooted in a long family tradition, starting from the centuries-old olive trees inherited from the grandfather and the nickname “Tatamà”, which in dialect combines “tata” (dad) and “Mase”, a diminutive of great-grandfather Tommaso. This name, initially only familial, has become the symbol of the authentic identity of the agricultural project, deeply tied to memory and the land. In a transforming regional agricultural landscape, Tatamà today represents an original voice, committed to preserving local biodiversity and telling a piece of Puglia's history through high-quality oil, wine, grain, and processed products.

Tatamà exclusively cultivates and transforms native varieties of the territory, with a production that is entirely certified organic. The six hectares of olive groves host historic cultivars such as Cellina di Nardò and Ogliarola Salentina, Slow Food presidia and symbols of Salento's agricultural identity, now severely tested by Xylella. Next to the olive trees, there is space for four hectares of durum wheat cultivated with ancient varieties such as Senatore Cappelli, Tumminia, and Russello, used to produce pasta, frise, and artisanal taralli, an authentic expression of peasant culture. Viticulture, in the heart of Salento, also plays a central role: from the organically cultivated vineyards come three sincere and territorial labels — a Salento Rosso, a Salento Bianco, and a Salento Rosato — that tell of the sunshine, freshness, and minerality of this land. True wines, direct, that respect the local grapes and return their soul without forcing.

Tatamà is today a small stronghold of agricultural and cultural resistance, where every bottle and every product is the result of a conscious choice. Every gesture, from the vineyard to the bottle, from the ear of grain to the oven, is made with the intent to protect and enhance the agricultural wealth of Salento. The Salento Rosso expresses the strength and maturity of the summer sun, the Rosato embodies the balance between structure and freshness, while the Bianco narrates the minerality of the breezes blowing from the sea. Next to these, the extra virgin oil and baked goods close the circle of an agriculture that puts memory, biodiversity, and respect for the land at its center.
