Vaudon

Vaudon is considered one of the most important Maisons in the Cognac region. It is a domaine located between Verrières and Echallat, managing an estate of about 60 hectares of vineyards cultivated in the prestigious areas of Grande Champagne and Fins Bois. The vines are planted with Ugni Blanc, the most widespread grape variety in the region, which genetically corresponds to our Trebbiano. In the countryside, rules are followed that respect the environment, without the use of chemical fertilizers and with the utmost attention to maintaining the natural vitality and fertility of the soils. Attention to agronomic aspects plays a very important role within the domaine. The quality of the grapes, which arrive at harvest ripe and healthy, is indeed the premise on which the entire production activity of Cognac is based.

Each plot of the estate is carefully monitored, with diversified harvests according to the ripening times of the bunches, in order to achieve the perfect balance between sugary sweetness and freshness, essential for having wines harmonious to then start the subsequent distillation process. Once fermentation is complete, the base wines are aged for a few months and then transferred to the distillery premises. The production process of Cognac still takes place today using the traditional Charente stills heated with direct flame. A procedure followed with meticulous and careful artisanal care, designed to obtain distillates with a particularly refined and elegant profile.

Once distillation is complete, maturation begins. The first phase involves the use of new barrels made from oak sourced from the Limousin forests, while in the second phase, previously used barrels are employed, allowing for a slow evolution of the distillates without any transfer of wood aromas. The final phase of the production process concerns the delicate moment of blending, an ancient art passed down from generation to generation by the Maitre de Chais, true custodians of the secrets of the Maison. In this way, balanced and harmonious Cognacs are obtained, perfectly representing the style elegant and classic of the Vaudon labels.
