Nestled in the heart of the Cotes de Beaune region, in the village of Meursault, the Domaine Vincent Girardin winery has been actively interpreting the diverse and multifaceted terroir of Burgundy, which is probably the most famous wine region in the world, since 1980. As the son of winemakers from Santenay, Vincent decided to set up his own business, starting with the cultivation of a couple of hectares inherited from his parents, and soon established the elegant quality of his wines among Burgundy connoisseurs. Due to the great request for bottles demanded by the market, Vincent launched a production method that included the purchase of grapes from other producers on the Cote d'Or. These producers shared the same agricultural philosophy, which was respectful of the environment and the vines, and focused above all on organoleptic quality and territoriality, which in Burgundy is highly diversified.

After lengthy experiments designed to achieve the highest organoleptic quality, Vincent Girardin's winery underwent a radical change in 2000 with the hiring of enologist Eric Germain. The decision was made to focus on the essence of each individual bottle, with the aim of expressing the great Burgundy terroirs that only Pinot Noir and Chardonnay in this region can best portray. In order to achieve an authentic result that was faithful to the terroir, herbicides and insecticides were banned in the vineyard and the use of ecological, localised fertilisers was favoured. In the cellar, on the other hand, the changes included the exclusive use of indigenous yeasts for long spontaneous fermentations, the implementation of long ageing on the fine lees in barrels made from the best French wood, and the moderate, if any, use of new barriques. Furthermore, every process in the cellar is performed following the lunar calendar.

The production style of Vincent Girardin is characterised, as far as white wines are concerned, by finesse and elegant aromatic purity, together with sensory balance, richness of flavour and tactile softness, which are always combined with a vibrant freshness. The Meursault, Puligny Montrachet and Chassagne Montrachet wines produced by Girardin are a perfect example of this. As for the red wines, which come mainly from the Cote de Beaune region, they are developed to reach a subtle elegance through fresh and crisp fruit aromas. They are defined on the palate by flexible and delicate tannins, such as in the Santenay, which is one of the winery's many varieties that offers finesse, elegance and territorial loyalty.
