Made from Airén grapes, among Spain's most productive grape varieties, harvested at great altitudes: the vines are almost 700 meters above sea level! On the nose, there are fresh fragrances of flowers, citrus and herbaceous notes. In the mouth, it has great flavor and good freshness, with the effervescence tickling the palate amiably. The Ancestral Sparkling Airén Bianco ‘Vivo del Aire’ from the small artisanal winery Torresano is a bottle-fermented wine with a light and lively taste produced in the Spanish wine region of Castile La Mancha. The white grape variety Airén, native to La Mancha, is one of the most widespread in Spain, where it accounts for approximately 25% of the total vineyard area. Until the 1990s, it was the most cultivated variety in the world, valued for both its high productivity and its resistance to drought and vine diseases. The earliest documented evidence of a grape variety called Airén dates back to 1615, although as early as the 15th century this grape was referred to as Lairén.
The Airén Bianco Ancestral Sparkling ‘Vivo del Aire’ by Torresano is a 100% Airén from vines about 60 years old grown at an altitude of 680 meters above sea level according to regenerative viticulture practices. After harvesting, thegrapes are vinified in white through spontaneous alcoholic fermentation in stainless steel tanks with the sole intervention of indigenous yeasts. When the fermentation process is not yet fully complete, the liquid is bottled for the second fermentation according to the Ancestral Method. Throughout the entire process, no clarification or filtration operations are used.
The ‘Vivo del Aire’ Torresano Ancestral Sparkling White Airén has a light straw yellow color with moderate bubbles. The nose offers hints of green apple, jasmine, and Mediterranean scrub, combined with pleasant wine-like perceptions of must and yeast. A fresh and savory sip, with good body and light effervescence, featuring a fragrant and pleasantly rustic finish.
