Luca Marenco's Barolo 'La Volta' comes from a small vineyard of the same name near Barolo. After a long maceration, which takes place using the submerged cap technique, it matures in oak and then in the bottle for a long time. The nose is reminiscent of black cherry, dried rose and a touch of liquorice. On the palate, it is silky, with ripe tannins and a dry, persistent finish. Perfect with game and braised meats, it finds its maximum expression alongside a dish of hare salmì
