The Barolo ‘Sottocastello di Novello’ from the Langhe winery Ca’ Viola is configured as a classic and austere expression of one of the most celebrated red wines in all of Italy. For Giuseppe Caviola, owner, founder, and winemaker of the Ca’ Viola winery, this Barolo represents the culmination of a journey that over the years has led him to engage with the most important grape varieties of the Langhe, a journey that began with Dolcetto and has reached the majesty of Nebbiolo. The first vintage produced of Barolo ‘Sottocastello di Novello’ was 2006, and since then the bottle has taken little time to conquer enthusiasts and critics around the world.
Ca’ Viola Barolo ‘Sottocastello di Novello’ is a 100% Nebbiolo coming from a vineyard of almost 2 hectares located within the municipality of Novello and managed organically. Here, the soils are moderately calcareous, of a clayey-sandy nature, and on them grow vines of about 20 years of age located at 450 meters above sea level with a south andsoutheast. Once in the winery, the grapes are crushed in unglazed cement tanks for controlled temperature alcoholic fermentation with a portion of whole grapes, accompanied by 15-30 days of submerged cap maceration. The subsequent aging phase lasts at least three years, of which 2 in large oak barrels and one in cement. The wine is finally bottled without undergoing any filtration.
The Barolo Ca’ Viola ‘Sottocastello di Novello’ is ruby red tending towards bright garnet. Deep and austere is the olfactory panorama, described by vast aromas of sour cherry, rhubarb, chinchona, chocolate, and tobacco, enriched by balsamic and underbrush sensations. The taste progression is elegant, complex, and energetic, characterized by lifted freshness and a velvety tannic texture defining the long and seductive epilogue.
