Only indigenous yeasts are used for the creation of this version, while a long maceration on the skins of 28 days gives this bubble a unique profile. The Bottle Fermented ‘BelloRibelle’ from the Marche winery Tenuta Ca’ Sciampagne is a special sparkling white wine made from macerated grapes that combines expressive richness and dynamic smoothness. We are in the idyllic setting of the Natural Park of the Monti delle Cesane, just 3 kilometers from Urbino, where Tenuta Ca’ Sciampagne cultivates about ten hectares of certified organic vineyards, offering spontaneous and genuine interpretations of the territory, strongly linked to the winemaking tradition of the area. Among these is the ‘BelloRibelle’, the first macerated white produced by the winery, whose evocative name perfectly describes its seductive and untamed character.
Tenuta Ca’ Sciampagne ‘BelloRibelle’ Bottle Fermented is made from only white grape varieties, grown according to the principles of certified organic farming on clay-limestone soils rich in minerals. The bunches are harvested and carefully selected, then transferred to the winery where spontaneous alcoholic fermentation takes place in steel,with a prolonged maceration on the skins lasting about 28 days. Subsequently, refermentation in the bottle according to the Ancestral Method takes place. Throughout the entire winemaking process, the mass undergoes neither clarification nor filtration.
The ‘BelloRibelle’ Refermented in Bottle from Tenuta Ca’ Sciampagne is of an intense orange color. The bouquet is bold and distinctive, with hints of dried fruit and yeasts merging with light smoky notes. On the palate, it reveals fullness and rich flavors, as well as light fine tannins and a long aromatic finish.
