'The White of Mitja' from the Sirk winery is a wine produced by the young Mitja, a talented winemaker who cultivates the lands around the family restaurant, La Subida. This white aims to represent the philosophy of the winery, which seeks to express the territory and the vintage to the fullest, with minimal intervention both in the vineyard and in the cellar. On the nose, there are evident hints of yellow fruit and flowers, with pleasant green notes and almond on the finish. On the palate, it presents a surprising nerve combined with the traditional salinity of the territory. The result is a wine of character, with a gentle frankness, ideal for pairing with traditional fish and meat dishes.
