The "Modus Bibendi" by Elios is a Sicilian white wine made from Grillo grapes from a vineyard located in the municipality of Camporeale, near Alcamo. It ages for about 7 months in stainless steel in contact with the fine lees and explodes on the nose with a wide and varied aroma reminiscent of citrus, white peach, hawthorn, and green tea, releasing a very refreshing and savory sip, rich in balsamic echoes.

the grapes are destemmed and the must is allowed to settle for 24 hours. Fermentation occurs spontaneously in stainless steel tanks using indigenous yeasts, with another racking that retains the fine lees on which aging takes place for 7 months.
Elios White “Modus Bibendi” presents itself with a bright straw yellow color, with greenish reflections. From the glass comes a small kaleidoscope of aromas: the fruitiest notes of citrus and white peach, which, however, are not overwhelming and do not overshadow the notes related to hawthorn and green tea. There is a refined balance in the bouquet, which also includes balsamic touches, which we also find on the palate, especially on the finish. It is a fresh and rich in sapidity wine that recalls the sea near the vineyards and enjoys a clear and dry profile.
