In the Agro Pontino area, the Cabernet expresses itself with a pleasant fruit maturity, accompanied by the usual elegance of its wide aromatic spectrum. The long aging in barrique gives the wine a depth and complexity that makes it suitable for pairing with roasted red meats, braised dishes, or game at the table.
The red Cabernet Sauvignon is the result of a visionary project that brought viticulture to the lands of Agro Pontino, the countryside that stretches in the province of Latina, about fifty kilometers south of Rome. Casale del Giglio was born in the late 1960s, in a territory still virgin for viticulture. Thanks to careful zoning work, the grape varieties most suited to the soils and climate, characterized by the proximity to the sea and its mild iodized breezes. Among the various grape varieties chosen, Cabernet Sauvignon could not be missing, a true ambassador of French wine in the world.Born from a spontaneous crossing between Cabernet Franc and Sauvignon Blanc, Cabernet Sauvignon has found along the Lazio coastline the conditions to express itself at interesting qualitative levels. Fermentation takes place in temperature-controlled steel tanks. The wine matures in oak barriques for a period of 18-20 months and completes its aging with a year in the bottle.
The Cabernet Sauvignon wine from the Lazio winery Casale del Giglio is a red structured and with good aromatic richness. In the glass, it presents itself with a beautiful ruby red color. The olfactory profile opens with notes of small dark berries, hints of underbrush, delicate spices, and slight balsamic nuances. The sip immediately shows important body and structure, a beautiful aromatic persistence, a dense and refined tannic texture. The finish is long, with returns to fresh sensations of eucalyptus.
