The Cava Brut Nature ‘Azimut’ from the Catalan artisan reality Can Suriol is a sparkling wine with a joyful and carefree drinkability, the result of an ambitious project focused on environmental sustainability. In fact, with the ‘Azimut’ line, the Suriol family has set the goal of promoting organic farming in the Penedès area by working with grapes supplied by local winemakers who do not use any synthetic chemical products, then sharing the proceeds and thereby encouraging conscientious agriculture.
‘Azimut’ Can Suriol Cava Brut Nature originates from a blend of Macabeu, Xarel-lo, and Parellada grapes grown according to the principles of organic farming, thus without the use of synthetic chemical products. In particular, the grapes come from different areas of the Penedès, cultivated by families of winemakers distributed between the coast, the central area, and the mountainous region. In the winery, the base sparkling wine is processed through spontaneous alcoholic fermentation of the must in cement tanks, followed by a brief rest before the sparkling wine is bottled according to the Classic Method. The aging on the lees in glass lasts for 9 months and during the entire process the wine is not subjected to any filtration or physical treatments, nor is the use of additives allowed, except for very low doses of sulfites, necessary to protect the wine.
The Cava ‘Azimut’ Brut Nature from Can Suriol has a light straw-yellow color with a rich and persistent bubble. The nose reveals pleasant notes of pear, chamomile flower, grapefruit, and toasted almond, while on the palate it is fresh, broad, and energetic, with a savory and rustic finish where the sensations felt on the nose reappear.
