In keeping with the customs of the area, it is a blend based on Pinot Noir, to which is added a small percentage of Chardonnay, which contributes to its refined elegance to mellow the face of the cuvée. "Carte Noire" is a Brut Champagne that perfectly expresses the personality of the Verzy Grand Cru terroir, especially famous for the quality of its Pinot Noir. Located close to the coteaux de la Montagne de Reims, thanks to a cool climate and highly vocated soils, the Maison Jean Paul Deville produces Champagne with an artisanal face based on an ancient savoir-faire that can count on the experience of five generations of vignerons. At the end of the harvest, Pinot Noir and Chardonnay grapes are gently pressed and vinified in white separately. After several months, the vins clairs are blended to create the final cuvée. The second fermentation takes place in the bottle, according to the Champenoise Method, with ageing on the lees for 24 months before dégorgement.
