This label is made from a blend of Chardonnay, Pinot Noir and Pinot Meunier as well as being aged on its lees for a minimum of 36 months. The colour is a pale straw yellow and the fine and persistent perlage reveals fruity and floral aromas and hints of small pastries. The taste is fresh, taut, mineral, agile and with a long finish.

Its fruity and citrusy character makes the sip smooth and pleasantly satisfying. The Maison was founded in 1968 but is based on solid savoir-faire passed down from generations of winemakers. Thanks to an excellent vineyard park, divided into numerous plots located in Cramant, Cuis, in the Côte des Blancs, Côte de Sezanne and in the Vallée de la Marne, Dhondt Grellet can create blends that focus on expressive harmony and a truly classic profile, in line with the best tradition of Champagne.
“Dans Un Premier Temps” is a Champagne Brut by Dhondt Grellet, which is born from a blend based on a majority percentage of Chardonnay, integrated with a balance of Pinot Noir and Munier. It is made with a selection of grapes from the best vineyards of the estate, which are about 40 years old and are cultivated with lowyields to achieve better aromatic concentration. The Chardonnay comes from the Côte de Sezanne, the Pinot Noir from the Vallée de la Marne and the Meunier from Cuis, south of Épernay. The harvest takes place at full ripeness and the grapes are vinified separately by variety and individual plots. After soft pressing, only the free-run must is fermented in temperature-controlled stainless steel tanks. The vins clairs rest for a few months on the fine lees, undergoing malolactic fermentation, before being blended with the addition of 30% reserve wines, which give maturity and balance to the cuvée. The second fermentation takes place in the bottle, according to the Champenoise Method with a yeast aging of 2-3 years, depending on the characteristics of the vintage.
