The maison Bruno Paillard assembles this Champagne Brut Millésime starting from Chardonnay and Pinot Noir, to which a small percentage of Pinot Meunier is added. The grapes are harvested with extreme care, ensuring that only the best clusters grown within 10 different parcels located within the owned vineyards are selected. A complex bubble, which after the first fermentation remains to mature on its own yeasts for a good 7 years, and that, after the disgorgement operations, the winery decides to let age for another 12 months in the bottle.
