'DIALECTIC WHITE' PENHO 2021 DESCRIPTION

'Dialectic' Branco di Penho represents a Portuguese expression that highlights a vibrant fresh-savory verve, adept at teasing the senses. The wines of this small artisanal winery founded in 2017 are made from grapes grown in Quinta de Penho, within the Vinho Verde viticultural region, through minimally invasive methods aimed at indulging the most faithful manifestation of terroir. With this in mind, nothing is added and nothing is taken away, with the exception of very low doses of sulfites designed to preserve the wines' characteristics. The estate logo is inspired by the wooden door of the centuries-old cellar.

The vinho branco Penho 'Dialectic' constitutes a blend of the indigenous Azal and Trajadura grape varieties, grown according to the dictates of organic farming. The grapes undergo 2 days of pre-fermentation maceration before pressing and spontaneous alcoholic fermentation. The entire vinification process takes place in stainless steel tanks, where the mass matures for a few months on fine lees without batonnage. The use of clarification, filtration and stabilization is strictly excluded.

In the glass, the Branco 'Dialectic' from the Lusitanian production reality Penho reveals a gold and cloudy yellow. The aromatic set is defined by aromas of white-fleshed fruit, aromatic herbs and citrus fruits, combined with brackish memories. In the mouth it is very fresh, slender and saline, invigorating and very drinkable. By virtue of its characteristic lightness and relevant fresh-savory component, this label is enhanced by non-overly structured dishes with a sweet tendency, such as traditional pastéis de bacalhau, delicious codfish croquettes.
