The red wine ‘Econverso’ from Cascina Melognis is a craft and sincere expression produced in limited quantities from a great international grape variety. This bottle was created to celebrate the article by Armando Castagno and Giampaolo Gravina dedicated to the red wine ‘Novamen’ from the same Cascina Melognis, whose story began in 2009 from the desire of Michele Fino and Vanina Maria Carta to enhance the territory of the Saluzzesi Hills. For this purpose, the couple focused, in addition to ancient local grape varieties, on Pinot Noir, a variety that in cool climates characterized by significant temperature excursions between day and night provides the highest quality results.
Cascina Melognis ‘Econverso’ originates from only red grapes grown according to the principles of organic farming on soils made up of rock, gravel, and sand, particularly rich in mineral elements. Following the manual harvest, the bunches are pressed in stainless steel tanks, containers in which alcoholic fermentation takes place at a controlled temperature.controlled in contact with the skins spontaneously thanks to the presence of only the yeasts present on the grapes and in the winery environment. The malolactic fermentation is carried out completely, also spontaneously.
In visual examination, the red wine ‘Econverso’ from Cascina Melognis expresses a pure ruby red color. From the glass, vivid sensations of red fruits and orange emerge, accompanied by deep spicy hints of black pepper and sweet spices. On the palate, it is balanced between enveloping softness and refreshing acidity, with a subtle tannic structure leading to a fruity and spicy finish. The ideal pairing for the wine ‘Econverso’ is represented by second courses of assorted meats and platters of cured meats and aged cheeses.
