Cascina Melognis

Cascina Melognis is a small winemaking reality from Piemonte that makes respect for the environment and the uniqueness of the territory the cornerstones of its production philosophy. The history of the winery began in 2009 in the municipality of Mulino Cerrati, north of the city of Cuneo, in an alpine area located at the foot of Monviso. Here, Michele Fino and his wife Vanina Maria Carta started the winemaking activity after purchasing several vineyards located in the Colline Saluzzesi area, which until then had been intended for self-consumption. Michele embarked on this winemaking journey after graduating in Law, driven by passion and the desire to continue his family's history, who have always been farmers and breeders, while Vanina gained experience at a winery in the Barolo area.

The hectares of vineyards cultivated by Cascina Melognis are less than 4, dedicated to ancient traditional varieties such as Pelaverga Grosso, Barbera, Neretta Cuneese, Freisa, Bolana, and Nebbiolo di Dronero, clone of Chatus, alongside Gouais Blanc, Chasselas, and PinotNero, a grape variety that provides the best qualitative results in cool climates like those of the Saluzzo and Ravello areas, where the estate's vineyards are located. The altitudes range from 330 to 500 meters above sea level while the soils consist of rocks, gravel, and sand, poor in organic matter but rich in mineral elements. Based on these environmental parameters, following the principles of organic farming, Michele and Vanina cultivate their vineyards with low yields of grapes per hectare, in order to enhance the quality of production. Fermentations occur spontaneously in stainless steel tanks, containers in which some wines remain to mature, while others age in French oak barrels of multiple passes. For the production of sparkling wines, the Classic Method technique is adopted while for sparkling wines, the slight effervescence is achieved in the bottle using the “solouva” method, employing only must as a source of sugars.
