The ‘Comitis’ from the artisanal winery Cascina Melognis is characterized as a white wine with surprising smoothness and dynamism, made according to artisanal practices. At the helm of the Piedmontese estate Cascina Melognis are Michele Fino and his wife Vanina Maria Carta, a couple who take care of just 3.6 hectares of vineyards dedicated to sought-after varieties such as Pelaverga Grosso, Barbera, Neretta Cuneese, Freisa, Bolana, and Nebbiolo di Dronero among the black grape varieties, Gouais Blanc and Chasselas for the white grapes.
Cascina Melognis ‘Comitis’ is born from a blend of white grapes cultivated according to the principles of organic farming on acidic soils rich in skeleton, clay, and mineral elements, located at an altitude of 370 meters above sea level with a southeast exposure. The harvest is carried out entirely by hand in September and is followed by spontaneous alcoholic fermentation of the must in stainless steel tanks conducted by only indigenous yeasts, with about 24 hours of skin maceration.The entire fermentation process takes place at controlled temperature, in order to preserve the natural freshness and primary aromas of the wine.
The white 'Comitis' from Cascina Melognis has a straw yellow hue. The nose offers fresh aromas of white-fleshed fruit and citrus, combined with enchanting notes of white flowers and mineral hints reminiscent of wet stone. The taste is smooth and easy-drinking, intensely fresh and savory, rich in fruity and citrus returns. Due to these organoleptic characteristics, the 'Comitis' represents a perfect wine to drink young as a refreshing aperitif, or at the table paired with seafood appetizers or lightly aged cheeses.
