Vite ad Ovest's 'Bayt' is a Sicilian white wine made from Grillo grapes, produced in the Marsala area. Fragrant and balanced on the palate, it is refreshing thanks to its lovely acidity and slight salinity on the finish, while the nose is dominated by notes of white fruit, citrus and orange blossom. Perfect with fish and shellfish dishes or seafood couscous, typical of the Trapani area

The “Bayt” from the winery Vite ad Ovest is a lightly skin-macerated white wine produced in Sicilia according to a production philosophy rooted in sustainability. The estate’s agronomic management is based on practices that deeply respect nature and its cycles, including green manure and cover cropping, as well as the complete exclusion of synthetic chemical products. Weeds are controlled exclusively through manual intervention. Since 2018, the entire estate has been certified organic.

Vite ad Ovest “Bayt” is a 100% Grillo made from vines cultivated according to certified organic farming principles in the contrada Baiata area, within the territory of Marsala. The vineyard is 15 years old and grows on soils composed of calcarenite and sand, situated at an altitude of 100 meters above sea level. Following the manual harvest, which takes place during the second half of September, the grapes undergo two days of skin maceration. Alcoholic fermentation occurs entirely spontaneously in stainless steel tanks and chestnut barrels, the same vessels in which the wine matures on its fine lees for six months before bottling, carried out without prior filtration or fining.

In the glass, Vite ad Ovest’s Grillo “Bayt” displays a bright straw-yellow color with golden highlights. The nose reveals pleasant aromas of white-fleshed fruit, citrus, and orange blossom, supported by evocative saline mineral nuances. On the palate, it is fresh, balanced, and smooth, marked by vibrant acidity and minerality that accompany the finish. Thanks to its distinct iodized notes, this Grillo pairs beautifully with seafood cuisine, especially dishes from the traditional cooking of the Trapani area.
