The Erbaluce of Caluso "Eolga" from the Ilaria Salvetti winery is a Piedmontese white wine with a territorial nature capable of telling the story of Northern Piedmont. This label is made with the homonymous grapes selected by hand and vinified using only indigenous yeasts before aging for 6 months on the fine lees. The Erbaluce di Caluso "Eolga" is produced by the winery of Ilaria Salvetti. Although it was founded only in 2012, it can rely on the experience of several generations who have passionately dedicated themselves to viticulture, particularly to the native white grape variety Erbaluce, a true ambassador of the Canavese territory, one of the most interesting areas of Piemonte. It is the most typical version, which best expresses the varietal characteristics of the grape, characterized by floral notes, rich fruity aromas, and a clear freshness that makes each sip always pleasant and fragrant.

The white Erbaluce di Caluso "Eolga" is born in a young family-run reality in Canavese. Ilaria Salvetti's winery manages a 4-hectare estate and produces artisanal wines with a strong territorial identity. The Erbaluce vineyards are located within the municipal area of Caluso, on a morainic hill at an altitude of 350 meters above sea level. The soils are rich in skeleton, characterized by the presence of pebbles, gravel, and sands, left by the retreat of an ancient glacier, which has shaped the entire area of Canavese. The vineyards are managed under organic farming, using only sulfur and copper. The harvest takes place manually in the first decade of September. The grapes are gently pressed, and the free-run must ferments spontaneously with indigenous yeasts in temperature-controlled steel tanks. Before bottling, the wine matures for six months on the fine lees to acquire structure and aromatic complexity.

The "Eolga" Erbaluce di Caluso by Ilaria Salvetti is a white wine of great expressive finesse, which expresses a remarkable taste balance.  In the glass, it presents a light straw yellow color with luminous reflections. Elegant and refined, it expresses a bouquet characterized by delicate scents of hawthorn, jasmine, and orange blossom, aromas of white-fleshed fruit, green apple, peach, Williams pear, hints of citrus peel, and nuances of aromatic herbs. On the palate, it presents a soft and fragrant fruit, with a harmonious, slightly aromatic sip, rich and crisp, supported by a lively freshness, crossed by a clear savory trail. It is perfect to pair with seafood dishes or risottos or pasta with vegetables.
