The Etna Bianco "Ante" from the winery I Custodi Delle Vigne Dell’Etna is a complete and complex synthesis of the Volcano's territory, as suggested by the name of the wine derived from the anagram of the word Etna. It is a blend of the most representative grapes of the area, harmoniously combined to enhance the peculiarities of this land. The greatest values of I Custodi Delle Vigne Dell’Etna are indeed preserving the territory, maintaining traditions, and respecting the individual; from these values arises an approach to winemaking that enhances the precious heritage offered by nature. The particularities of the environment and the countless facets of the soils, along with the variability of the present microclimates, dictate the wonderful quality of Etna wines, characterized by sapidity, finesse, and class.
The white "Ante" is composed of 70% Carricante grapes and a remaining portion of Minnella and Grecanico, cultivated on the northern slope of Etna. The vineyards are located atan altitude ranging from 850 to 1,200 meters above sea level, featuring sandy volcanic soils rich in minerals. The vines have an average age of around 40 years and are cultivated using the bush training system. The harvest is strictly done by hand towards the end of September/beginning of October. Once brought to the winery, they are pressed whole with gentle pressing. The obtained must is placed to ferment and age in stainless steel containers. An additional aging of 6 months in the bottle precedes commercialization.
I Custodi Delle Vigne Dell’Etna "Ante" has a straw yellow color, with bright greenish reflections. The bouquet is characterized by white notes, with hints of fruit, anise, almond, wild herbs on a mineral background that introduces the volcanic and marine salinity. On the palate, it indeed confirms a distinctive sapidity and finishes with a finely almonded aftertaste. A wine of class and composed complexity.
