The Etna Bianco "Cavanera Ripa di Scorciavacca" is a fresh and expressive wine with bright and engaging minerality, vinified and aged in steel. It emanates aromas of wild yellow flowers, white fruit and citrus. On the palate it is soft, round, fresh and dynamic, with persistent sapidity.

The Etna Bianco wine “Cavanera Ripa di Scorciavacca” encapsulates the passion and dedication that Salvatore di Gaetano, owner of the Firriato winery, has for the Etna terroir, a true unicum of the island. A white wine where the freshness derived from a beautiful acidic backbone blends with the overall softness of the structure on the palate, resulting in a delightful product to drink now, but which can excellently face a period of evolution of 3-4 years.

This wine “Cavanera Ripa di Scorciavacca” is an Etna Bianco that originates from a blend of indigenous white grape varieties where, alongside 90% Carricante, we also find 10% Catarratto. The vines of these two varieties are trained using the espalier system, in vineyards characterized by a sandy-loam volcanic subsoil, located on the northern slope of Etna, at an altitude ranging from 750 to 850 meters. The grapes, as soon as they arrive in the vinification facilities of Firriato, undergo a cryomaceration, before being pressed and sent for fermentation in steel, for 20 days. After that, it moves on to maturation, for 6 months on fine lees in steel, and for another 12 months, in glass, after bottling.

The Etna Bianco “Cavanera Ripa di Scorciavacca” reveals itself to the eye with a brilliant color, reminiscent of straw yellow, crossed at the rim by greenish reflections. The nose is dominated by enveloping sensations of flowers, enriched by nuances that touch on mineral and fruity notes, especially citrus. On the palate, it is medium-bodied, full, with an incisive sip that relies on a very refreshing sapid vein. A white with which the Firriato winery confirms its role within the Sicilian wine scene, presenting itself on the market with interesting scores.
