“Ca' Melò” Frizzante Rosato is the result of the passionate work of an interesting reality in the Saluzzese area. Cascina Melognis is a small winery founded in 2009. The vineyards are located on the first hills rising towards Monte Monviso and enjoy a cool climate with strong temperature variations, characteristic of the pre-Alpine environment. The grapes of Neretta Cuneese, Barbera, Freisa, Chatus, Pelaverga come from small parcels located in hilly areas at an altitude of about 450 meters above sea level with a sunny exposure facing west and southwest that favors excellent ripening of the grapes with rich and elegant aromatic profiles. At the end of the harvest, a very gentle pressing of the bunches is carried out with a brief contact with the skins to extract aromas and a minimum of color. The must is then sent for white vinification in temperature-controlled stainless steel tanks. The second fermentation takes place in the bottle according to the Ancestral Method, using indigenous yeasts and grape must, without final dégorgement and with a minimal addition of sulfur.
The Frizzante Rosato “Ca' Melò” Cascina Melognis presents itself as a beautiful lively rosé, with a continuous perlage and a light and evanescent foam. The bouquet is intense and rich, with aromas of wildflowers, hints of pink grapefruit, pomegranate, raspberry, red currant, wild strawberries, nuances of medicinal herbs and mountain herbs.mountain. On the palate, it is characterized by a beautiful expressive tension and by a rich and ripe fruit, which leads to a dry, savory and very fresh finish. You can taste it by leaving the yeasts at the bottom or shaking it to bring them into suspension.
