The Garnacha ‘Hautua’ Biba Ardoak from the young producer Ibon Aristu of Bodegas Aristu is an organic red wine with a fresh and fruity aromatic profile, made in the viticultural area of Navarra through a minimalist and genuine enology aimed at enhancing the territory and the local winemaking tradition. In the Basque language, the term “hautua”, the name of this label produced in limited quantities, means “choice”.
Biba Ardoak Bodegas Aristu Garnacha ‘Hautua’ comes from only Garnacha Tinta grapes from 25-year-old vines that naturally provide a low yield compensated by excellent quality, conducted under certified organic regime. The harvest is done by hand in 15-kilo crates with careful selection of the bunches, which are then transferred to the winery and whole-berry fermented for spontaneous alcoholic fermentation carried out by only indigenous yeasts and accompanied by prolonged semi-carbonic maceration. Once the fermentation process is completed, the pomace soaked in wine has been subjected to a delicate manual pressing of 8-10 hours, aimed at extracting the noblest compounds. The entire winemaking and maturation process takes place in stainless steel tanks, containers in which complete malolactic fermentation also occurs. During the entire processing, the mass does not undergo any clarification or filtration operations, and no sulfites are added even at bottling.
‘Hautua’ Garnacha Biba Ardoak Bodegas Aristu is an intense garnet red. The aromatic spectrum articulates on fruity notes of cherry and berries that blend with floral perceptions of violet. Spicy and leather notes complete the olfactory context. On the palate, it is juicy and dynamic, intense and enveloping, with soft tannins that accompany the persistent finish.
