Bodegas Aristu

Bodegas Aristu represents the winemaking project launched in 1995 by the Aristu family in the Navarra region, just northeast of the famous Rioja, pursuing an absolutely genuine production philosophy. The winery is located exactly in Lumbier, a municipality about 40 kilometers from the city of Pamplona, a territory that both the founder Juan Ramon Ollo Aristu and his young son Ibon have committed to enhancing by creating expressions that reflect the uniqueness and tradition of the area. The bodega is also represented by Biba Ardoak, an association that brings together small independent producers from the Basque Country who operate organically in order to give visibility to these small realities.

The vineyards of Bodegas Aristu extend over 30 hectares and are exclusively dedicated to the two traditional varieties Garnacha Tinta and Tempranillo, along with small percentages of Garnacha Blanca. The vines are cultivated on soils mainly composed of flysch and marls at an altitude of about 500 meters above sea level. The winery has also been the first bodega in Navarra to obtain organic certification as CPAEN (Council for Organic Agricultural Production of Navarra). The harvest is accompanied by a careful selection of the grapes, which are then transferred to the winery where fermentations occur spontaneously thanks to the sole intervention of indigenous yeasts, sometimes associated with carbonic maceration for red grapes. For winemaking and aging, stainless steel tanks are mainly used, in order to preserve the character of each wine intact, although oak barrels are also present. In addition to still wines, Ibon also produces sparkling wines through bottle refermentation according to the Ancestral Method and sparkling wines through the prestigious Classic Method. Clarification or filtration operations are banned and often the addition of sulfites is also excluded, otherwise used in minimal quantities.
