"In Absentia" from the Spanish winery La Senda is a red wine from Galicia with a juicy and agile character, capable of satisfying every palate without compromising. For its production, manually selected Trousseau (Bastarda) grapes are used, vinified with indigenous yeasts and aged for 9 months in French oak barrels. The ruby red color dresses the glass in a bright mantle, while the nose and mouth are surprised by juicy red fruit.

The red wine ‘In Absentia’ is the flagship label of the artisanal winery La Senda by Diego Losada. It is a pure expression of Trousseau, also known as Bastardo and Merenzao, a black grape variety native to Jura in eastern France, but widely spread in various wine regions, from Portugal to Spain and California. Located in Ponferrada, in the El Bierzo area, La Senda consists of 3 hectares of vineyards distributed in small heterogeneous plots from a pedological point of view. Diego's goal is to reveal the maximum expressive potential of the place, adopting agronomic and enological practices that are as minimally invasive as possible and always respectful of the territory.

La Senda ‘In Absentia’ is produced from only Trousseau grapes, coming from various old plots with plants aged between 70 and 90 years, rooted in clay-limestone soils with quartz presence at 550 meters above sea level. Following the harvest, the grapes are immediately transferred to the winery, where alcoholic fermentation takes place in barrelsof chestnut, with 3-4 days of contact between the must and the skins. Once the fermentation process is complete, the wine is aged in French oak barrels for 9 months before being bottled without undergoing filtration and sulfitation.

In the glass, ‘In Absentia’ by La Senda displays a bright ruby red color. Rich and full is the aromatic bouquet, defined by fruity aromas of cherry, blackberry, and sour cherry that meet perceptions of aromatic herbs. On the palate, it is characterized by pleasant juiciness and agile tannin, as well as good final persistence consistent with the fruity sensations of the nose. A genuine and gastronomic Galician interpretation, ideal pairing with various main courses.
