Domaine de La Pepiere's Muscadet is a splendid liquid in its iodine essentiality, which belies the advocates of its consumption exclusively as a young wine. The Domaine de la Pepiere is a bastion located in the northernmost tip of Brittany and extends over some 35 hectares, devoted almost exclusively to producing white grapes. Historical evidence confirms the particular affinity of Muscadet, an often mistreated grape, for these places that have an essential and rocky conformation. The choice of Marc, founder of the Domaine in 1984, was to establish a strong link between vines and area of origin, with the help of Remi and Gwenaelle, which led him to opt for the definitive conversion to biodynamics. Muscadet de Sevre et Maine wine is produced from pure Melon de Bourgogne grapes selected from a 12-hectare vineyard with a plant age of around 25 years. The vines are grown on granitic soil, without the use of any chemical or synthetic substances, with manual harvesting of the bunches of grapes and accompanying sorting. The grapes are softly pressed in the cellar, and fermentation occurs spontaneously in vitrified cement tanks. The liquid then matures for 6 months in the same container and is bottled without racking.
The Domaine de La Pepiere Muscadet reveals itself in the glass with a straw-yellow robe edged with golden hues. The nose is extremely subdued and rarefied, delicately displaying notes of green apple, hawthorn, thyme and distinct iodine hints. A varied but always whispered picture of extreme finesse. In the mouth, the liquid is no less, revealing itself in a jumble of freshness and savouriness, making it a transversal and extremely ductile wine on the everyday table, but also to be tried on a plate of oysters. The persistence, delicate and subtle, is due to a refined saline texture. Splendid expression in subtraction!
