Domaine Jean-Jacques Confuron's Nuits-Saint-Georges Premier Cru "Les Chaboeufs" is a label that sees the light of day in one of Côte d'Or's most famous places. The village that gave its name to the Côte de Nuits and is home to as many as 41 Climats classified as Premier Cru in its communal territory. It has always been famous for its great Pinot Noirs, which are intense, complex and long-lived, and can count on splendid hillside exposures facing east and southeast, characterized by a cool, breezy climate and soils mainly composed of fine limestone-clay marls.
Domaine Jean-Jacques Confuron's Premier Cru "Les Chaboeufs" Nuits-Saint-Georges is an expression of one of the estate's most prized parcels. The property covers 8 hectares and is managed by Alain and Sophie Meunier with full respect for nature, according to the principles of organic and biodynamic agriculture. Pinot Noir grapes come only from a parcel located in the Premier Cru "Les Chaboeufs," which is located in the southern part of the Nuits-Saint-Georges communal area towards the border with Premeaux. The grapes are harvested by hand and after a short cold maceration, they are sent to fermentation with a maceration period on the skins of about two weeks. After a short static decantation, the aging process begins, which takes place in French oak barrels, 70% new, for a period of about a year.
"Les Chaboeufs" Nuits-Saint-Georges Premier Cru from Domaine Jean-Jacques Confuron synthesizes in the glass the personality of the terroir, which has always been famous for giving Pinot Noirs of great elegance, but also characterized by structure and power. These are wines of character, which find excellent pairings with roast lamb, duck breast, rib-eye steak or small game. To the eye it has a rather intense and dark ruby color. The olfactory picture reveals aromas of underbrush, humus, licorice root, medicinal herbs, on a rich background of red berry fruits. On the palate it has good body, with dense and well-integrated tannins, ripe and persistent aromas, anticipating a long and harmonious finish.
